Mission Menu Challange and My Favorite Dinners

I’m always looking for ideas for dinners that are easy, inexpensive and something that my kids and my husband will eat. I’ve a few using tortilla shells. I use to get the ones in the dairy section, then I found Mission Tortillas. We get the 10 inch flour tortillas. Sometimes we get the 8 inch. ( They also have 6 inch ones) The tortillas have 0 grams Trans fat per serving and are cholesterol free, which is good for my husband who has high blood pressure.

My favorite two dinners are Breakfast Burritos and Beef Burritos. Of course our dinners are kinda plain, but we all like it and eat it so well go with that.

Our Breakfast Burritos are made with scrambled eggs, frozen potatoes and ground up sausage. I add cheese, sour cream and salsa to mine. The kids skip the potatoes. It’s a super easy meal! I always make extras to serve for breakfast or another dinner.

Our Beef Burritos are made up with ground beef and cheese. I know real original and very boring. I mix a little salsa in the ground beef (no one knows because I mix the salsa in the blender so there’s no chunks) I serve it with rice and voila – dinner! Sometimes I mix some lettuce and tomatoes, sour cream and such. Once in a blue moon I’ll add chili for my hubby.
