I chose to make soup. It’s still a little chilly in North Florida and my mother had made a really good soup the other day and I wanted to try to make it myself.
I went to Publix and picked all the ingredients. It is Italian Days at Publix so several of my ingredients were on sale. Yeah!
I went on what my mother told me and bought a rotisserie chicken, Progresso Broth, white beans, diced tomatoes, carrots, frozen spinach and noodles.
I’ve always followed a recipe before so to wing it was a little different. I basically added all of this together with a few spices and water and set to boil, then simmer.
It looked good and tasted good. But the next day when I went to get some there was no broth! I added too many noodles and they took all the broth away. So will have to add some more broth. Thankfully it was on sale, Buy One Get One Free.

I always leave the noodles in a separate container when I make soup. I just can’t abide mushy noodles. They ruin a perfectly good soup.

My pasta does that to my soups sometimes too. I don’t usually mind too much.
I don’t mind the pasta soaking up the broth the next day. 🙂 And, I usually follow a recipe, but I’m thinking about winging it on a soup, too.

We don’t have a Publix where we live. But we eat a lot of pasta and sauces and such – I wish our grocery store did Italian days, I’d clean up!
