It’s also essential to drink plenty of water and get the recommended six to nine hours of sleep daily. Overindulging in alcohol can also start to take a toll on your skin that you never noticed in your 20s. Avoid cigarette smoking, which can cause fine lines and wrinkles, and always keep your skin protected from the sun with an SPF of at least 15.

Another recipe from Southern Living’s Rotisserie Chicken Cookbook. Fiesta Chicken Soup. This was by far my favorite!! It had just enough spice and it tasted so good. I had it for lunch for three days in a row and am wishing I made a bigger batch. I really want to make some more and you know what? I think I will do just that!!

The sour cream and cheese toppings made this taste even better. I would truly recommend them, if you like them. This will keep you warm on those chilly days.

 

Fiesta Chicken Soup

This is the best soup I’ve had in a long time!
Ingredients
  • 1 medium onion, diced
  • 1 tsp. vegetable oil
  • 1 garlic clove, minced
  • 3 cups chopped rotisserie chicken
  • 1 (15 oz.) can chili-hot beans, undrained
  • 3 1/2 cups chicken broth
  • 1 (15 1/4 oz.) can whole kernel corn with red and green peppers, drained
  • 1 (10 oz.) can diced tomatoes and green chiles, undrained
  • 1/2 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • Toppings:
  • sour cream, shredded Mexican four-cheese blend
Instructions
  1. Saute onion in hot oil in a large Dutch oven over medium heat 7 minutes or until tender. Add garlic and sauté 1 minute. Stir in chicken and next 8 ingredients.
  2. Bring to boil, stirring occasionally; reduce heat and simmer 15 minutes. Serve with desired toppings.

What’s for Dinner from Southern Living has great 30 minute meals that everyone will love! I recived their cook book to review and found a wonderful recipe I just knew my family would enjoy. We love breakfast for dinner so the Sausage and Cheese Frittata would be perfect.

Sausage and Egg Frittata

Ingredients
  • 1 (12 oz.) package of reduced fat ground pork sausage
  • 8 large eggs
  • 1/2 cup milk
  • 1/2 tsp. pepper
  • 1/4 tsp. salt
  • 1 Tbsp. butter
  • 1 cup (4 oz.) shredded 2% reduced fat Cheddar cheese.
Instructions
  1. Preheat oven to 350 degrees. Brown sausage in a 100inch ovenproof non-stick skillet over medium heat, stirring often, 10 minutes or until meat crumbles and is no longer pink; drain and transfer to a bowl. Wipe skillet clean.
  2. Whisk together eggs and next 3 ingredients until well blended.
  3. Melt butter in skillet over medium heat; remove from heat, and pour half of egg mixture into skillet. Sprinkle with cooked sausage and cheese. Top with remaining egg mixture.
  4. Bake at 350 fro 23-25 minutes or until set.

 

Now, I did not have an ovenproof skillet, so I used a cake pan to put my ingredients in to place in the oven. It turned out fine. I served this for dinner and everyone loved it!

Unbreakable

Unbreakable by Nancy Mehl is second in the Road to Kingdom series. And while it is book one, you certainly can read this as a standalone book. I did read the first book, Inescapable and have to say I look forward to a third book in this series.

While I love reading Amish stories, this one is more of a mystery than Amish romance. The book is based on a Mennonite town, which does off similarities to the Amish but differences as well. I really enjoyed the characters Nancy Mehl creates. I would recommend this book to any mystery or Amish reader. Or if you just want something different.

Unbreakable is about a young woman named Hope who is trying to decide between a man she always thought she would marry or a newer member of the community. A member her father disapproves of but her heart flutters every time she sees him. In the meantime there is a gang of church burnings in neighboring towns and members of the Mennonite church are being driven off the road by a red truck. One of them is Hope. The Town is divided by sticking to tradition and pray or protect themselves and keep watch. Hope is also divided as her two men or on opposite thoughts.

Gentle and unassuming, Hope Kauffman has never been one to question the traditions of her Mennonite upbringing. She quietly helps her father run Kingdom Quilts and has agreed to the betrothal he arranged for her with the devout but shy Ebbie Miller. Despite the attempts of Hope and other Kingdom residents to maintain the status quo, changes have already begun to stir in the small Mennonite town. The handsome and charismatic Jonathon Wiese is the leader of the move to reform, while Ebbie insists Kingdom must remain true to its foundation. When Hope’s safety is threatened by a mysterious outsider, she can’t help but question what she’s always been taught about the Mennonite tradition of nonviolence. As it swiftly becomes apparent the threat Hope faced is only the beginning, the town that’s always stood so strong finds itself divided.
