PopCorn Balls

Sunday was a rainy day in our neighborhood and my daughter wanted to make something. So she looked in her cookbooks that she made in cooking class last year and came up with popcorn ball.

Pretty easy to make and only a few ingredients needed.

Popcorn
marshmallows
Butter
Sprinkles
Chocolate Chips

Melt the butter and add 40 large marshmallows to a non stick pan over medium heat, until melted.

Add 6 cups of popped popcorn and stir with a wooden spoon. Add Sprinkles, candy or chocolate chips. and stir.

Then place butter on hands and form popcorn into balls and cool. Then eat!

We’ve had two of them for almost 3 years and we adopted our third in April. I’m not sure why, we were fine with two. But I looked up brown rice recipes on RachelRay.com and from a Brown Rice Pilaf. This will go great with our chicken. So I was all excited to try my new recipe and we all love rice so I just knew it would be great!   20140812_173500 All you need is: 1 tablespoon extra virgin olive oil 1 Handful of whole wheat thin spaghetti, broken into little pieces 1 cup brown rice 2 cups chicken stock salt and pepper Then…. In a high-sided covered skillet over medium heat, heat 1 tablespoon olive oil. Add the spaghetti and toast untill golden brown. Add in the rice and toss for about 1 minute. Stir in the stock and bring to a boil. Then cover and simmer for 40-45 minutes. Full with fork and serve 20140812_173445 Well…My daughter had a friend over and her mom came to get here just as the spaghetti noodles were “browning” on the stove. needless to say they got a little black. I should have started over right there but I went ahead and finished the dish. Unfortunately the dish tasted a little burnt. So…it was not a big hit with the kids. I ate about half my serving.
