Fresh Express 30 Swap Challenge

I was given information and coupons to create this recipe.

I love to eat, I admit it. I love salad too so I try to get a good salad when we go out to eat. But at home, I just get the basic salad or eat the stuff I’m not supposed to.

So when offered to receive some coupons for Fresh Express and share with my friends, how could I resist? I checked out the Fresh Express 30 Day Swap and so they had so many salads I wanted to make. But I choose to make a Bacon Cheeseburger Salad. So instead of indulging in a juicy bacon cheeseburger, I made a healthy Bacon Cheeseburger Salad.

Bacon Cheeseburger Salad
A Bacon Cheeseburger has 1000 calories
A Bacon Cheeseburger Salad has 420 calories

Here is what you need to make this delicious salad.

Ingredients:
1 package Fresh Express Italian, roughly chopped

1 lb. lean ground beef
1/2 onion, minced
1/4 tsp. salt
1/8 tsp. black pepper
1/2 tsp. garlic powder
1 tbsp. extra virgin olive oil
1 cup aged cheddar cheese, shredded
1 cup cherry tomatoes
1/4 cup dill pickles, chopped
2 green onions, thinly sliced
1/2 cup bacon bits

Dressing – 1/4 cup of your favorite reduced Thousand Island Dressing

Instructions
1. To make the burger balls combine ground beef, minced onion, salt, pepper and garlic powder in a bowl. Then using a teaspoon, form mini balls, set aside.
2. Over medium heat add the olive oil to a large skillet sauté pan. Then working in batches, carefully place the burger balls in the sauté pan. Cook each side approximately 1-5 minutes or until thoroughly cooked. Make sure to carefully turn the balls so that are heated throughout. Once all the balls are cooked, place them on a plate and top with cheddar cheese. ( Make sure to add the cheese while the burger balls are hot so it will melt.)
3.In a large bowl, add the romaine, pickles, tomatoes and dressing. Mix well. Place salad on 4 separate plates and then top each plate with 4 burger balls. Then garnish with green onion and bacon bits.

Family dinners are important in our house. But with a busy schedule we don’t always get to sit down as a family. But when do we try to make a great dinner that everyone will enjoy. Sunday is a great day to put together that special meal that everyone loves. Our favorites are Spaghetti, Ziti and Chicken and Mashed Potatoes. Better-For-You Buffalo Chicken Burger

I was sent some wonderful coupons to try out some new and fun recipes! I had a meeting in my home and wanted to make something I thought everyone would enjoy, so I looked through the many recipes and chose two.

The first one was the Better-For-You Buffalo Chicken Burger. It just looks so good! Then I wanted something that the kids would like so I chose PB&J “Plus” Bagel.

Then I had to do some shopping. I purchased Arnold Sandwich Thins – Healthy Multi-Grain and Thomas Bagel Thins 100& Whole Wheat. Both count 3 points toward Weight Watchers, if you track there, which I do. I love sandwiches but sometimes there is just too much bread. These are perfect for those days when I’d rather have more protein than bread.

Next were all the ingredients. Ground chicken  – a first buy for me but not my last. Non fat yogurt, Low fat blue cheese, cream cheese and strawberry jam were all on my list.

Other breads to choose from depending on your taste are:

Buffalo Chicken burger
The recipe and ingredient list for the Better-For-You Buffalo Chicken Burger is as follows:

You will need –
4 Arnold Multi-Grain Sandwich Thins
1 lb uncooked lean ground chicken
1/8 tsp Kosher Salt, or to taste
1/8 tsp round black pepper, or to taste
1/4 cup water
3/4 cup plain non-fat Greek yogurt
2 Tbsp hot sauce
4 oz low-fat blue cheese, crumbled

Then season the chicken with salt and pepper, mix in 1/4 cup water.
Shape the chicken into 4 patties and set aside.
Heat non-stick griddle pan or large skillet over medium-high heat.
Add patties and sear until golden brown; meat will release when ready to flip.
Flip patties and cover until fully cooked, about 8 more minutes.
Meanwhile, mix yogurt and hot sauce. Spread yogurt mixture on bottom half of Sandwich Thins and then add cooked patty.
Divide blue cheese among the burgers and top with the other half of Sandwich Thins and enjoy!

The total for all of these ingredients together add up to 10 points in WW according to the WW website. I thought these turned out pretty well and am looking forward to making them again!

 

PB&J "Plus" Bagel

The next sandwich I made was the PB&J “Plus” Bagel. Very simple yet very delicious!

You will need Thomas Bagel Thins, I chose Whole Wheat. Also needed is cream cheese, peanut butter and jam.

Toast your bagel and add cream cheese, peanut butter and jam on top of the bottom half and place to top on and enjoy! I love all three ingredients together!

Are You Heart Healthy?

We use to eat much wore than we do now. Take out more often and more processed foods. But for the past five years I have been on a slow mission to get our family to eat healthier. It’s not easy when the kids are use to eating unhealthy and when your husband is a junk food addict. But I am trying and I’m loving it!

We make our own meals almost every night. We might get pizza every other week. But I like to use Lean Beef and chicken in many of our meals. The Lean Beef is a bit pricier but for me it’s worth it in the long run. We include a vegetable at every meal and not too much starch. I do not add any salts to our dinner, except garlic salt to add flavor.

I’m making chicken burgers tonight and am looking forward to see how everyone likes them.

I chose to make soup. It’s still a little chilly in North Florida and my mother had made a really good soup the other day and I wanted to try to make it myself.

I went to Publix and picked all the ingredients. It is Italian Days at Publix so several of my ingredients were on sale. Yeah!

I went on what my mother told me and bought a rotisserie chicken, Progresso Broth, white beans, diced tomatoes, carrots, frozen spinach and noodles.

I’ve always followed a recipe before so to wing it was a little different. I basically added all of this together with a few spices and water and set to boil, then simmer.

Homemade soup
It looked good and tasted good. But the next day when I went to get some there was no broth! I added too many noodles and they took all the broth away. So will have to add some more broth. Thankfully it was on sale, Buy One Get One Free.
