No Taste Like Home – Cook Book

I was lucky enough to review another Southern Living Cookbooks, No Taste Like Home. I love the Southern Living Cookbooks. They have wonderful photos and lots of tips. This particular cookbook also includes a history around the recipe along with tidbits about the south and people from the south. I loved just going through the book and “exploring” the south at the same time.

I choose a recipe to make, the Cheesy Potato Soup. I thought this would perfect with the cool weather approaching.

Very easy to make!

Ingredients:
3 lbs baking potatoes (6 to 8 medium sized)
1 small white onion, finely chopped
4 cups of milk or half and half
1 10 3/4 oz can of cream of mushroom, chicken or potato soup. ( I used cream of chicken)
1 8oz package of processed cheese, like Velveeta, cubed
Round Buttery Crackers, or saltines
1/4 cup shredded Cheddar cheese

1. Peel potatoes and cut into bite size pieces. Boil potatoes and onion together in 6 qt pot with salted water for about 15-20 minutes or until tender. Drain and return to pot.
2. Add milk, can of soup and cheese to potato mixture and bring to a simmer over medium heat. Cook, stirring occasionally, 4 minutes or until cheese melts. Add salt and pepper to taste.
3. Top with crackers and shredded cheese.

Not Quite Enough – Book Review

Certainly not like my usual reads lately, Not Quite Enough was a feisty romance. A great read and perfect for these rainy dreary days. Set in Jamaica, but it’s not all island relaxation. Monica is a RN from California who leaves to go on her first rescue mission in Jamaica after a terrible earthquake. But while there saving the hurt and sick she meets Trent, the helicopter pilot. Monica’s not one to fall in love so a nice affair and back to the states after her rescue mission was all she had in mind. But after being trapped with Trent, things take a different turn.

I definitely recommend Not Quite Enough by Catherine Bybee. I love to read and love finding new authors!

Monica Mann has made it her life’s work to save lives. After an earthquake and tsunami hit the shores of Jamaica, she volunteers her trauma skills with Borderless Nurses. Calculating and methodical, Monica creates order out of whatever chaos she finds.

Monica glanced up at the gray skies and frowned. “So, Trent,” she began again. “Are you the only one shuffling the foreign medical staff around the island?”

He shook his head. “There are a few others. Why?”

He kept his eyes on where he walked and avoided her questioning gaze.

“Just wondering.”

He didn’t buy that. “Just wondering?”

“Seems like anyone could drive me to the clinic.”

He walked her behind the hospital and up a short path to where his helicopter waited. “Anyone could drive you.”

She hesitated when she saw her ride. “I thought you said you were driving me.”

“I am. After a short flight to where my car is parked.”

She turned a full circle. “Can’t we just drive?”

Trent moved in front of her and removed his sunglasses. “It’s a short flight back to the airport, then a thirty minute drive. That’s if the roads are cleared.”

“Can’t we just—” Her ice blue eyes never left his.

“I didn’t kill you the first time, Monica. I won’t this time either.”

She swallowed.

“It was better thinking you volunteered to take me instead of being the only person capable of it.”

Actual fear hid behind her eyes. “Why’s that?”

“I prefer flirting to flying.”

A slow, easy smile met his lips. He knew then irrevocably that Monica thought about him at some point during her short stint on the island.

He replaced his sunglasses and reached for her hands. “How about a little of both?”

 Hawaiian Punch & 7UP #shop

My neighborhood is having a Halloween party on Saturday. I wanted to make some fun treats but I had to try them out first and see how it worked.

I bought the Mixed Fun Size Candies from Mars, some Hawaiian Punch and a 2 Liter of 7UP. I also purchased some white chocolate and slivered almonds.

I love to make candy so I took my already bought candy and added some extra spookiness. (I found that it was easier to refrigerate the candy before dipping into hot chocolate.) I covered the Twix bars in melted white chocolate and added a slivered almond to one end to resemble a witches’ finger.

I then took the Snickers Bars and cut them in half.  Then poked a lollipop stick into the cut end and dipped it into the melted chocolate and let in drip down to resemble a ghostly form. After I cooled the ghosts in the fridge I added some eyes and mouths in melted milk chocolate.

So it’s kind of like a Snicker’s Cake pop. Sort of.

What’s a party without a spooky punch?

Very simple to make and so delicious! All you need is Hawaiian Punch, 7UP and sherbert. Mix 1 part to 1 part Hawaiian Punch and 7UP. Then add sherbet to taste. I think I added too much but it still tasted great!. Add a few spiders and floating eyeballs and you are in for a spooky treat!
