Diabetes – Fit2Fight Campaign with Better’n Eggs #betterneggs

Diabetes is very prominent in my family. I knew it ran in my family since I was a little girl. My mother was diagnosed with in the past 10 years. My brother was diagnosed about a year ago. My mother’s parents, two brothers and three sisters all had type 2 diabetes. Type two diabetes usually comes on when a person is an adult. I was borderline gestational diabetic when I was pregnant with my first child, but ate better and exercised more with the second and was fine.  I expect to get it one day as well, but I will try my hardest to prevent it.
My mom is 72 years old and finally started to exercise regularly. She moved in April to an adult community and joined the water aerobics. Now that the weather is cooler, they have been exercising inside the clubhouse. My mom has stopped smoking which is great too! I know she buys healthier foods but she still keeps plenty of junk food laying around. I am writing this for her and any one else interested in ways to eat healthier.

Better’n Eggs?

I never really read or looked into anything other than regular eggs. I found out that Crystal Farms Better’n Eggs and All Whites are much healthier for you. They are fat free and cholesterol free. They’re made from real eggs, but only the white part is used. I’ve read recipes that ask for egg whites, it always seemed so hard to separate them, now I don’t have too!

When visiting my mother, I noticed she has eggs every morning. But she should be using All Whites. Maybe I’ll get her some for Christmas!! LOL

Plus they come in these cute cartons for no mess! Eggs are very good for you too! They give you lots of protein to help keep you active throughout the day. Check out the recipes below and check out the ones on their website!

Does anyone in your family have Type 2 Diabetes?

 

 

Wonton Wrappers:

Preparation: 25 minutes
Time-To-Table: 40 minutes
Serves: 12

Ingredients:
•24 wonton wrappers*
•nonstick cooking spray
•2 strips bacon
•1/2 cup grape tomatoes, chopped
•1 teaspoon chopped fresh basil**
•1 cup AllWhites®
•1/2 cup fat-free half and half

•1/4 teaspoon salt
•1/2 cup Crystal Farms® Finely Shredded Sharp Cheddar Cheese

Instructions:
Heat oven to 350°F. Spray one side of each wonton wrapper with nonstick cooking spray. Press each wrapper in to cups of miniature muffin pan, spray side down. Once all wrappers are in place; spray inside of each wrapper with additional nonstick cooking spray; set aside.

In small nonstick skillet cook bacon until crisp. Drain grease; finely chop bacon. In small bowl stir together cooked bacon, tomatoes and basil. Divide mixture evenly into each wonton cup.

In small bowl stir together AllWhites, fat-free half and half and salt. Carefully pour into each wonton cup. Sprinkle with cheese.

Bake for 13 to 15 minutes or until eggs are almost set. Serve warm or at room temperature.

Tips:

*Wonton wrappers are usually found in the refrigerated produce section of the grocery store. Wrappers are typically 3 1/4 inches square.

**Substitute 1/2 teaspoon dried basil

Customize this appetizer by adding 1/2 cup finely chopped mushrooms to each mini cup. Any variety will work. Also, Better’n Eggs can be used as a substitute for AllWhites.

*Percent Daily Values are based on a 2,000 calorie diet. Your daily values may be higher or lower depending on your calorie needs.
